get the cake tiers so perfect?!? Does anyone know? Do they stack the cake layers using "Cake Rings" if so, how do they do it? I've been trying to figure this out.... icon_wink.gif

Cake Rings are sometimes used to bake cakes in or its used to stack thinner layers of cake in to build a nice even shaped tier....that's what i was told!

I think I recall them using cake rings once.

they bake on baking sheet pans.... 1 in layers... then use a cake ring to build and tort their cakes... as support they use dowels... and most times they deliver their cakes already stacked... they are very sharp in their work... although now she is concentrating more on sugar work and i personally feel her cake designs are not as incredible as they used to be because she is trying to do more sugar work than cake work... but they do use cake rings... I want to start doing that... they are very specific when they say they like to have an equal cake to filling ratio...

I think that that is how they do it, but wouldn't the cake dry out baked like that?
