This is a great site, but what I am looking for is a great blueberry and raspberry filling that I can also use real berries in the filling with, without it getting mushey. Any good ones out there? Thanks to all.
With the price of fresh berries, I have switched to jam. It is shelf stable and as long as you use a good brand delicious also. You may have to toss into a mixer and add a bit of water to get it smooth enough to spread evenly.
This is the raspberry filling recipe that I use. It's great as a filling or put on top of pancakes with whipped cream or just with a spoon... lol
If you would want to add fresh berries to it, I would stir them in right before you fill the cake or fill the cake with the filling and then sprinkle the fresh raspberries on top of it.
