Freezing A Filled Cake?

Can I freeze a filled (bc), uniced cake? In addition to that, I have part of this 4 tier cake already in the freezer. Is it a bad idea to unfreeze, fill and refreeze? I am going to be under a serious time crunch because I return from vacation a day before this cake is due and am trying to do as much beforehand as possible.

Yes, you can freeze a filled cake. But I wouldn't unfreeze it to do so, I would just cool it down out of the oven, torte it, fill it and then wrap twice and freeze it. If the cakes are already frozen then torte the frozen cake, fill and rewrap. No need to thaw completely to fill.

What ever you do don't freeze a cake with pineapple cream filling. EWWW!
My first cake mistake. It thawed very curdly and weepy.

Thanks, I am going to fill the frozen cakes and put them back in the freezer before they thaw. I really wish I didn't have to do this, but oh well. I can only imagine how the pineapple cream defrosted...ick. Thanks again!
