I am jsut getting started and have an order for a red velvet cake with cream cheese icing.. Can i cover it in fondant?
Yes, I think I used the recipee in this link,
http://sugaredblog.blogspot.com/2008/12/few-of-my-favorite-things.html. If not it was from this link, http://designmeacake.com/cccbc.html. I used homemade MMF. Hope this helps.
Also forgot to mention I did the cake in the late fall when it was cool. It is already 85 here so I am sure with the butter it could be a mess. You might want to try less butter and more crisco.
NO! cream cheese contains an enzyme that breaks down fondant!!
This is what I read from a professional...so I just don't take the chance now..I fill with cr chz icing and coat with apricot preserves
Having said that...I have done it (before I did this research) and served the cake approx 4-5 hours later and it was fine.
just wanted to say thanks so much! I love this website!
i made my cakes this weekend and they turned out great with the cream cheese and the fondant! i will post pics when i can!
thanks again!
I've covered a cake (the bird on a brach cake in my photos) with cream cheese icing with all butter and satin ice fondant. I did not use a thick layer of the frosting. Just a crumb coat. It worked just fine.
Ive never had a problem with it.... I also refridgerate the cake with cream cheeze and fondant... ive been told thats another no no.... never had a problem.....do a little test cake and see......
