Hi everyone! I was wondering if I can frost the middle layer of my two sheet cakes before they are completely thawed...I only want to do this because I always have a problem with the cake breaking when I try to put the top cake on the bottom and I was thinking that if it's still frozen it would be easier to just place the cake without worrying it will break - is that doable?
Some say you shouldn't ice a frozen cake because it needs to "breathe" and some say that you can. When I worked at a grocery store bakery we iced frozen sheet cakes all the time.
I also work in a bakery, and we do ice frozen cakes all the time. And the ones we put on the display case seem to be fine the next day. When someone asks to write something on the cakes, the icing seems to be crusted ok.

I've frosted frozen cakes and thawed or fresh cakes. I have more trouble "playing with my crumb coat" as Edna would say, with frozen cake. I have not had any isssues with my fillings if I put the cake together frozen. I always make a substancial icing "dam" and I've never had bleeding, sweating, or any changes to the cake appearance when using frozen cake.
I've frosted them before frozen....but do not attepmt to put fondant on one until is has thawed..... you're talking about a nasty mess there.
