I have a bride who wants a 3 tiered red velvet cake with cream cheese icing. She had mentioned fondant, but the picture she has shows very clean, sharp edges. I have not covered a square cake with fondant and gotten the really sharp clean edges like you get with a crusting icing. What I was wondering, is if anyone has had success painting on a crusting cream cheese icing. Please share your thoughts and experiences. Thanks for your time!
