Ok, so im making a cake as a farewell gift to a teacher. The cake is going to be a giant apple with a fondant figure sitting top.

Now im struggling with flavours.
The teacher is a health nut, so i thought id go with something with a fruit/or veg in the name at least... hahaha.

Was thinking apple, but every apple cake ive tried has turned out too moist of to dry, and because i will be carving.. it needs to be a sturdy cake.

So then i thought maybe banana? or carrot?
But does anyone know any really yummy fillings i could use? im in aus, so i cant make fillings from pudding mixes.. etc.. which seems to be the base of most good fillings.=(

any input appreciated! icon_biggrin.gif

I think carrot cake with cream cheese buttercream as a filling would be great.
