What kind of icing does everyone use for a coconut based cake? I was going to make a WASC cake with a touch of coconut LoRann and cover in toasted coconut....but I am really stuck as for what icing to use? I can't stand the taste of coconut otherwise I would taste
I make coconut cake all the time. I always just use my favorite, Buttercream Dream, from here on CC.
how about cream cheese
I'd say coconut. I also like pineapple with coconut, or even chocolate, think Mounds bars.
Another thought would be like what you put on an Italian Cream Cake, the cream cheese icing with pecans and coconut.
I only ever use one frosting for coconut and that is Italian Meringue (NOT IMBC !) aka 7-minute frosting.
I make regular buttercream icing with coconut cream and pineapple juice instead of milk for the liquid. It's delicious.
