I have a question I just moved to Peru a few months ago and I can't find meringue powder or powder egg whites. I don't believe they sell it here. I've been doing my buttercream with real egg whites. So the question is...How long does buttercream with egg whites stays good for?
I do refrigerate de buttercream, but once is covered with fondant does it stay good being at room temperature? I know that fondant seals everything but with real buttercream I don't know if I should put the whole thing in the fridge.
What about cupcakes? Do they have to go in the fridge too?
