I've been searching for a recipe for lemon thumbprint cookies and have been coming up short so I've decided to try to put one together myself. My plan is to use lemon curd for the filling but I'm not sure what to use for the cookie base. Does anyone have any ideas? Thanks for your help

Here's a link to the recipe I use for thumbprints. The directions are for making a cookie w/ three tiny thumbprints joined together, but I've also used it to make larger individual thumbprints. You can use this dough with any filling.

Try this one:

Cream - 1c butter & 1/2 c brown sugar,
Add 1 egg & 1 tsp fresh lemon juice
(Combine & sift - 1 1/2 c quick oats, 1 1/2 c AP flour, & pinch of salt),
Add flour mix to cream mix,
Add zest of 1 lemon,
Form into balls & press w/thumb print.
Fill & bake 350 10-12 mins.

Let us know how it goes!
