I'm pretty new to the cake making stuff, I'm in love with it though, and I just don't know. If I am deliverying a cake on Saturday (tonight is Tuesday) can I make it and freeze it or something? Do I ice it now or later? I am eventually covering it in Fondant. I know I should wait for that part... right?
Yes, you can bake it tonight (Tuesday) and freeze it until Thurs/Fri (which ever day you will decorate). You can fill and ice and then freeze or you can freeze and then fill and ice after you thaw it. Both ways will work. Make sure it is completely thawed before applying the fondant.
You can bake the cakes a week in advance. Just make sure you cover them with plastic wrap really well. You don't want to let any parts of the cake exposed. I usually ice mine after I have taken them out of the freezer.
