Coloring White Choc

I'm planning on using white chocolate in some 3D molds and want to color the chocolate...can I use Americolor gel paste to color the chocolate or will that make it seize up? Should I just paint after the mold is done? detective.gif Thanks

Gel paste (any brand) will make the chocolate seize. HOWEVER, Americolor makes a product that, used in conjunction with their regular colors, can be used in chocolate without seizing. It is called "Flo Coat" http://www.countrykitchensa.com/catalog/product.aspx?productId=632164

Painting the molded chocolate won't work.
