I have a birthday cake order that was supposed to be delivered tomorrow night. The wife called this evening saying her husband (the birthday boy) got called on an emergency work issue out of town and won't be back until Friday so she wanted to know if I could deliver it Friday instead. Since it was originally due tomorrow (Wednesday) I was just finishing up filling and crumb coating it (it's a 3 tier). I was going to put it in the fridge tonight, and then cover it in ganache and fondant tomorrow for delivery. I've never re-frozen a filled cake before (it's filled with BC). Would it be better to re-freeze it until Thursday since they don't need it for an extra 2 days or is it better to just put it in the fridge until I'm ready to put the fondant on it? I want it to still be fresh and yummy like all my cakes are, but I usually freeze, thaw, level, fill, ice, and then refrigerate for a day before delivery. Just wondering if re-freezing will compromise the texture.

Go ahead and (re)freeze it, it will be fine.
