Carrot Cake Sinking In The Middle

I have been trying to find a good recipe for carrot cake that doesn't fall in the middle. Why does it do that? It isn't oven temp since I bake other cakes and it doesn't do that. Hmmm

Carrot cake is a very moist cake, and generally has quite a bit of oil. You also may be underbaking it. I don't find the toothpick test to be very reliable with carrot cake, and I usually bake it 10 minute longer when I think it's done.

I thought that it may be underbaked. Yes, I did the toothpick thing so next time I will bake it longer. Thanks for that tip!
