I'd really like to make some Pina Colada cupcakes. Below is the recipe I usually use (from All Recipes) *Note: I increase the sugar and milk in this recipe, but can't remember by how much at the moment.

Ingredients

* 2 1/3 cups all-purpose flour
* 1 tablespoon baking powder
* 3/4 teaspoon salt
* 1 1/2 cups white sugar
* 1/2 cup oil
* 2 eggs
* 1 cup milk
* 1 teaspoon vanilla extract

What do you guys think if I replaced the milk with 1/2 pineapple juice and 1/2 coconut milk? For other variations what about all pineapple juice, or all coconut milk?

Personally I'd make a coconut cake and a pineapple filling or a pineapple cake and a coconut filling/Icing. To me if you put both flavors in the cake they may get too muddled and neither really stand out any.
