Does Cake Flour Expire?

Hi. I don't get cake flour locally and ask a relative to get it from abroad. I was under the impression that cake (or all-purpose, for that matter) flour doesn't spoil if if i freeze it in air-tight containers. However, the particular brand I got specifies an expiration date. Is it unsafe to use it after thbis date? (I realize how *duh* that sounds, but I'm hoping I don't have to throw away an unopened bag that's been in the freezer for a year).

The date is a 'freshness' date.
Not at all unsafe to use, especially as you freeze it.

You can tell if it's no good if it states stale. Just dab a little on your finger; if it just tastes like flour, feel free to use it.

I half-wish that were true.... may be I wouldnt be gaining all the extra weight thenicon_razz.gif
