Over 50 years ago my Mothers best friend was from Rome. Her sister was one of the pastry chefs in the Vatican this is what they filled there Canolli with.
1 Quart ½ and ½
2 Egg Yolks
7 Tablespoons Cornstarch
10 Tablespoons Sugar
1 Teaspoon Vanilla
Beat egg yolks sugar cream and cornstarch. Slowly bring to a boil and remove from heat and cool when thick.
Optional: Add chopped almonds
1/2 Teaspoon Cinnamon & high quality Chocolate Chunks
