by the way I've frozen it before too and it's fine! I only did it for cupcakes though, and didn't notice any difference in the way they rose!

I did because I didn't want to throw it out, and did NOT feel like baking anymore at that point in time. I just thawed it and used for cupcakes for my family, it tasted the same!
