Hi Im making a fresh cream cake for an order, but how do you write a message on a fresh cream cake? Can you do it out of sugarpaste? without it sinking or melting into the cake??

Sugarpaste will probably melt, MMf is slightly better. You could pipe letters in melted chocolate and let it dry on a piece of parchment paper and then put them in/on the cream.
I sometimes make a banner of MMF and pipe RI text on that. But it will not hold for more than a day

You can write on top of whipped cream with good old buttercream too!
