Storing Cakes Before Decorating And Fondant

I have 2 questions. First, I need to bake my cakes a day or two before the actual event and I was wondering what the best way to store the cakes to keep them fresh is. And second, is there any steps between putting a layer of buttercream on and covering in fondants?

I freeze mine. After they cool completely wrap in plastic then foil. Will keep very well for days.
