This weekend we are going away and i want to make a cake can i make the cake friday let it cool wrap it up put it in the freezer or fridge? Its only going to be over night I am going to be decorating it satuerday. I will get it out Sat morning bring it to room temp. and then decorate it. Put it in the box and in the fridge until sunday.

Dose this sound right? how do i wrap it up?? any help will be great and i will post pics when i am done.

I always bake in the first part of the week and PLAN to get the cakes in the freezer for a day or two. Makes for better cake. (if its wrapped properly.)

baking, wrapping tight, putting in freezer, taking out, let thaw room temp, decorate. sound right. but you do not need to put back in frig. does it have perishable filling. i find that putting back in frig. can make it dry out. other might say different. hth

question: how does freezing make for a better cake? i always thought that it would make it dry and crumbly.
this would be a great asset to the process if i can freeze prior to decorating.
do you fill the cakes prior to freezing or just freeze them plain?

I ALWAYS freeze my cakes before decorating and if Leah_S says it makes for a better cake I certainly trust her judgement. I don't fill before freezing though.

cakes I freeze are always more moist - I love it!
