Hi...I've made the buttercream dream icing numerous times & I'm still having trouble smoothing it....if I add merengue powder would that help smooth it out? Or does anyone have a good recipe for buttercream that's easy to get a smooth finish on cakes? Thks-Gina

Smoothing comes with practice. And you may be making it too stiff.

I use BC Dream all the time. Try the hot spatula method.

When I use to use Crisco, I had a teribble time with it sticking and showing thru,Crisco had changed their receipt over the years. So I went back to Hi Ratio shortening and everything looks flawless again. I will never go back to the old way. Plus I can go right to the Viva paper towel method. My cakes look like fondant and flawless, when I am done with this method. Plus as someone else said here, lots of pratice. Hope this helps. thumbs_up.gif
