How Do You Make Your Fondant When You Need A Big Amount??

by batches?? do you double the recipe??? or do you make it a recipe at a time?

I make mine in batches using Michele Foster's recipe.

I always make it in bulk...I use 8 pounds of confec. sugar, 1 full bottle of corn syrup, 4 pkgs gelatin, and 1 bottle of Wilton glycerine. That's 4x the normal recipe amounts, and there's no measuring of the liquids since you can just pour the whole bottle in.

I use MMF, and I make it one batch at a time - made 18 pounds for one cake in December! A gallon ziploc bag will hold 2 recipes of MMF (6 pounds)

Ditto. If you make too much it keeps very well in a ziplock baggie.
