I'm doing my first wedding cake here in a few months...and it's a GF CAKE!!!!!! How scary is that?!?!?!
Anyway, I'd really like to start trying some recipes. Does anyone know of any tasty, sturdy cake recipes? Thanks in advance for the help!!

However, making gluten free cakes is more involved than just finding a gluten free recipe...
(For example, you'll need to either thoroughly sanitize/decontaminate all your kitchen/decoratings utensils and cake pans, etc. or buy new and inspect ALL ingredients very carefully - for starters!)

So it appears you would be well advised to clarify with the customer that you can provide a flour free wedding cake, but you can't certify it to be gluten free.
A contract stating the above will prevent any misunderstanding of what is being provided. (But if you don't have liability insurance, you just might want to wait on making your 1st wedding cake...)
