How about a cake with a gum paste baby in the center and the Irish flag draped over her like a blanket? You could also put shamrocks around the cake or pipe on some Celtic knotwork (that's ambitious, but maybe you're an expert at piping).

Or, you could put the baby on a shamrock in the center of the cake and drape a pink blanket over her and put the Celtic knotwork (or Celtic symbols) all around the sides of the cake.

HTH!

I like the idea of the cake being a shamrock shape, in a very pale green, and then having the pink girl baby on the top, centered in a basinet. with blanket covering.

I don't know if this link works (I've not tried doing it before). If not, try searching clover cradle. I saw this cake when I was searching for cradles. You could easily incorporate some pink in the blanket. http://www.cakecentral.com/cake-photo_262003.html
