I recently got an email ad from America's Test Kitchens for their annual book. One of the blurbs mentioned a much healthier version of carrot cake with less fat and about 1/2 the calories of traditional. You could try to see if you can find that one for a start. I have a cookbook called Babycakes that uses all healthy and organic recipes along with some gluten free. They look relatively low in fat. It's from a popular cupcake place in NYC that the stars frequent. I haven't tried anything yet. They look expensive to make because of specialty ingredients. The person who started it developed the recipes when she became gluten intolerant.
