White Chocolate Rum Cream Filling

I just wanted to share a recipe I recently came up with. I got rave reviews from everyone who tried it. It is a white chocolate ganache mixed with rum cream (made by Cruzan Rum), folded into homemade whipped cream.
The recipe could be halved, it did make quite a bit.

1 1/2 c. white choc chips
1/4 c. heavy cream
1/4 c. Cruzan Rum Cream (or more depending on your taste)

Heat the heavy cream, pour over the chips. Stir until all chips are melted, then add rum cream. Stir until combined. The consistency will be almost like caramel. (You could stop at this point, and have a glaze.) I folded in homemade whipped cream, a little at a time, until you reach a consistency you like.

I used this to fill coffee flavored cupcakes, then frosted the tops with the plain whipped cream. They were really good, even better the next day.
I came up with this because my Grandfather recently started drinking the Rum Cream in his coffee!
If you've never made a coffee flavored cake, substitute a good, strong coffee for the water, and add about 1 tbsp of instant coffee/espresso. Yum!
