I was home the other day (baking) and watched several episodes of Cake Boss and have seen Ace of Cakes and some other shows too. Do you think they use mixes or everything is from scatch. I know some of them say 'from scratch' but there's always a line there especially when you see them doing a 6 foot long cake with sheet after sheet of cakes. Plus one got messed up in the car so they had to go back and had lots of cakes already made. I realize they have a bakery too but just wondering?? Those guys are amazing.

I know that Buddy is a member here and has said on many occasions that he bakes solely from scratch.

I don't know about Duff.

Bakeries usually have many extra layers ready just in case they need them.

Deb,

I can tell you that we make our cakes from scratch. We bake in 80 or 160 pound batches, depending on the day.

Yes I have eaten cakes from Carlos Bakery and they are definately scratch. Buddy is a sweetheart. He was so nice to my grandkids, it was something they will never forget. We especially love their canolli's yummy

I believe Duff uses all from scratch also as I saw an episode where one of his bakers was testing out different flavors of cake and of frosting...there was an odd one (can't remember exactly what it was) and I know there isn't a "mix" for that, nor could you add to a mix to get the flavor he was trying to get...really wish I could remember the flavor...dang...lol

Just the other day on the Disney episode, Buddy was asking for the ingredients he needed and he said he was a scratch baker. I'm sure he is, they are very old school there.

Forget the cannolis, have you seen the crumb cake!!! mmmmmm

Maybe you are thinking of the time Duff's baker made a white russian cake. I think it was for a "Big Lebowski"-themed party.

I remember one of the early Ace of Cakes episodes, his baker (Adam?) was trying Green Tea icing. icon_smile.gif I bet it was super yummy.

We drove down from Ma on our way to Va and had the cannoli - to DIE for!! Also had cream puffs and some cupcakes. Definitely worth the trip!! Hopefully we'll see Buddy next time!

They must have the 'Rose factor' down to a science!! Buddy's sisters are a riot. I loved it when they changed the recording voice in the frog cake on him.

Every time I now take my grand kids and maybe a friend or two of theirs, to NYC, on the way home we stop at Carlos.............they sit on the bench out front and eat whatever they have been dreaming of haha...............

I don't think Charm City Cakes is open to the public anyway, unless you have an appointment. Duff is a pastry chef so I would imagine they bake from scratch there.

I watch both shows but I can only watch Cake Boss for a short time...I just can't handle all the yelling. Their cakes are pretty wicked though. I'm surprised their open bakery can keep up with the walk in business now that they're so popular due to show.

I've been going to Carlo's for years--way before Buddy was on TLC or even Food Network, even before I was a pastry chef myself--and they have ALWAYS done a huge volume of customers, especially near the holidays, when there was almost always a line out the door, even 10-15 years ago when I first started going there.

they bake from scratch.... the reason they cake just get another layers if needed is because they freeze them... so they always have cake on hand....
