Does anyone know what tip she uses to get this kind of look on the cupcake?

Either a large round tip, or no tip and they just cut the piping bag.
Try the Wilton 1A tip or the Ateco 809... if these aren't big enough then just try cutting a pastry bag and using it without a tip.
