I am in search for a caramel icing/frosting that is not made with powder sugar,If any is willing to share. I am making this cake this weekend. Thanks in advance
You could try substituting packed brown sugar for the granulated in an Italian or Swiss meringue buttercream.
(And substitute caramel extract for the usual vanilla or other flavorings.)

I make regular smbc and add caramel to the finished project. I add up to 1 cup of caramel. Makes a very good icing.
This caramel icing is delicious. It's my aunt's recipe, and she would never give it to anyone. When she died, my mother "inherited" it. It tastes like fudge.
1 1/2 cups brown sugar
1/2 cup white sugar
1 cup half and half
Combine ingredients. Boil until it reaches the soft ball stage-this takes about 25 minutes. Let it cool a bit. Beat and beat and beat some more. Beat until it's not shiny.
That's it. Try it!
Peridot,
I hope you like it.
and if it gets to stiff, you can always add a little more milk.
poohsmomma, this is delicious with whipping cream instead if half and half. My mom used to ice with it but also cook it longer and make yummy caramel fudge
just thought I would share too. I use IMBC and add the dulce de leche from a can by Nestle. The stuff is really very addicting and you can use it for so many things.
