Hi All,
I'm relatively new to cake decorating and would like to try my hand at royal icing and have a few questions.
1 Once you make it how is is best to keep it?
2 How long can you keep it for?
3 I've seen a Mininie Mouse face done using "run out" (?) that needs to dry for 4 or 5 days but once it's dry how long would it be good for?? i.e. could i make it 3 or so weeks before the party??
4 I don't have many tips - any hints on changing colours easily?

Once a run-out is dry, it will last indefinately. Make sure to turn it over to try on the both sides. It will be VERY easy to break so be careful. RI needs to be kept in the fridge and it will make a difference if you are using egg whites or merguine powder. Also, make sure you keep the bowl and icing bag covered with a moist cloth or with saran wrap as it will dry out very fast.
