I will be levelling 2 cakes with different flavours (lemon and carrot) and after cutting off the dome, I will have alot of cake left. Is it possible to blend them all together and mix with dark chocolate ganache or will it taste odd?

Taste the 2 together with a dab of ganache - if you like it, go for it! I think it sounds yummy!
