Can I Freeze Ganache?

I'd like to do a batch of chocolate ganache so I can take it out when a customer comes for tasting. Is this possible and how long does it take to defrost. Do I have to re-whip it or can i just spread it on the piece of cake? I wast thinking of storing it in a tub like icecream and taking out a scoop an hour before a customer comes around. How long will it last in the freezer?

Yes, you can freeze Ganache
It takes about 20 minutes to defrost - remembering how warm a day it is and how warm it is inside your home.
No, you do not have to whip it - altho you can.
Freezing it in an ice cream tub is perfect
I do not like to store mine any longer than 6 weeks - thats if i make double/triple batches up.

is frozen ganache like icecream where its easy to scoop out or is it rock hard?

Not rock hard - but firm.
Yes, you can scoop some out straight from the freezer.
