Hi, here is a great video from tonedna. Its has three parts. You can buy floral tape from any cake decorating shop. Make few flowers in different sizes and then you can make some leaves and make the spray.

I suggest you get Jennifer Dontz's (Sugar Delites) newest DVD "Fabulous Floral Arranging" which is excellent. You will learn a lot!!!
