I am doing this crown cake next week.I will be using 3 layers of cake (2 inch high) and will torte them.Do I need to dowel the cake and if so how many...nothing is going ontop. Also I noticed on most of the cake shows after they have iced and torted 2 layers...they usually put a cardboard between the other 4 tortes. Why is this..not stable?

For only three torted layers I wouldn't bother dowelling. I think they put the boards between them on the cake shows so that it will be easier to serve the cake. It would be hard to cut and plate 4-layer pieces! Also, most cakes are two layers, so when they're calculating servings that's probably what they're using.
