On Monday, Buddy made sugar coral. Melted the sugar, added color to it, then poured it over ice. It was so pretty. I just want to know what type of sugar he used to make it. I couldnt understand what he said the sugar was called. Was it Isomalt? Correct me if I am wrong.
most people use isomalt, theres lots of info on that (and also melting sweets like jolly ranchers down) in the sugar forum here.

Buddy used Isomalt. That's why the colors were so "pure" and not cloudy at all. I LOVE using Isomalt but it's kinda expensive. I'll be "borrowing" his technique to do an Aerielle Cake in March. I've done the Jolly Rancher thing as well and made jewels. It works too, but, the colors are kinda "dark" sometimes....can't really "control" the color as well as I would like.
