Im Making a wedding cake with strawberry filling. Is it okay if I make the cake with the filling and frost it two days before if I leave it in the fridge?
What kind of strawberry filling are you planning to use?
A fresh strawberry filling or a strawberry mousse must be refrigerated.
A strawberry sleeve filling will not require refrigeration.
Is the strawberry filling perishable?
If you're using the sleeved strawberry pastry fillings (which don't require refrigeration) there's no reason to refrigerate the cake. Just put in a box (even if you have to cut up a moving box and cover the top with plastic wrap) to keep it safe and dust free.
