Hello everyone,
I tried doing a search but I am not finding a good answer, or I am not looking in the right place which is entirely possible.

Does anyone have a good recipe for white chocolate buttercream? I know that Wilton has their recipe but I am not generally a fan of their buttercreams with the exception of the Extra Special recipe. I tend to prefer lighter butercreams with little to no shortening flavor if someone knows of something like that.

I am making a 3 layer, neapolitan cake for my daughter's birthday and white chocolate buttercream has just stuck in my head as a great complement to the strawberry, chocolate and vanilla flavors.

Any advice or help would be greatly appreciated! Thank you.

I adapted this from Toba Garrett's buttercream recipe.

2 cups butter, room temp
1 cup shortening
1 1/2 tsp vanilla
1 tsp salt
3 lbs confectioners sugar
1/2 cup white choc flavored non-dairy creamer
18 oz real white choc (not chips)
3 tbsp meringue powder

Melt creamer and chocolate together, then cool to room temp.
Meanwhile...
Cream butter and shortening until completely smooth.
Add flavoring and salt.
Gradually add sugar, one cup at a time.
Add meringue powder.
Add chocolate mixture and beat until smooth.
