Hi. I usually use Antonia74's Royal icing recipe which includes cream of tarter AND Meringue powder.

then i got another recipe from a good friend who does cookies as a side business...her recipe has no cream of tarter in it.
can you tell me the difference? what does the cream of tarter do?

which is reccommended for cookies? i have to make 40 or so princess crown cookies in the next couple days...

thanks so much.

If the meringue powder contains cream of tartar, then you don't really need to add it. Most meringue powders do contain it. Cream of tartar helps egg whites whip better and hold the air once whipped better.
