how do you store an iced cake filled w/mousse filling in the fridge w/o it drying out too much..it will need to be in the fridge the day/night before the party.
Once the cake is iced, it won't dry out. The frosting seals in the moisture in the cake. Still, should be in a covered box or a Tupperware type container so that it doesn't absord flavors from other foods. Bring cake out about 20 min before serving so it can warm up a bit. The mousse will still be cold enough, but the icing and cake won't be hard from the chill (makes the cake taste dry to eat it when it is cold).
totally agree, the cake stays moist once iced. I always make sure i have a full box of baking soda near by to absorb any fridge ordors.
