Tiered Cake

Hi, I have a 3 tier cake to do for this weekend. Want to ask if you do a tiered cake do you cover the cakes and stack them on top of each other immediately or do you let them rest first and then stack them on top of each other.

I usually cover the tiers and assemble straight away. By using dowel inserted into bottom tier and under the board the cakes are very stable thumbs_up.gif

I am just a hobby baker with young children, and don't usually have time to fondant all the layers and stack immediately...they usually sit in the fridge for a while before I can assemble, and that seems to work just fine to (I've never had any problem with the cakes sweating).
