I'll be making both a carrot cake (carved) and a red velvet (4 tier) cake in April for my Son's wedding. I need to travel 5 hours to get to the wedding site, plus it will sit on a table for another 3 to 4 before the cake is served. Can anyone give me a few alternate ideas for another type of filling beside Cream Cheese, that will complement these two cake flavors?

Thanks,
Tammy

I tried to do a search on this, but didn't really see any topic like this for the last couple of months.

White chocolate buttercream will work with both carrot and red velvet nicely.

This is what I use, I have a non-haz food license so I improvise:

Red Velvet: vanilla or choc BC
Carrot: Cinnamon BC, Vanilla BC, Ginger BC, Orange BC... I've even used coconut BC with excellent results.
