Need A Red Velvet Recipe That Will Hold Up Well To Carving

Hi. I am fairly new to cake baking and decorating and do not have a huge variety of good recipes under my belt. As I do a fair amount of carving, I usually use the durable, 3-D cake recipe for yellows, whites, and chocolates.

I am making a cake for this Saturday that was supposed to be a yellow, but the customer has changed her mind and is requesting red velvet. This cake will be carved as well, and I am looking for a good recipe for a red velvet cake that will hold up well to carving.

I would like to use an enhanced mix recipe similar to the durable cake recipe if possible.
