I only have 3" pans and before I go out and buy 2" ones, does anyone know if I can just use the amount of batter that a 2" takes only in the 3" pan? I don't know if there would be any downside to using less batter in a 3," i.e. there is more metal exposed and conducts more heat or batter is too low and air doesn't circulate as well? I can always experiment if need be!

Thanks!

Yes you can, there shouldn't be any problem.
