As you can see I'm pretty new to this, but I found Rick's Special Buttercream recipe here and want to try it today. I am just unsure how much icing this will make? I am just doing a basic birthday cake for my daughter, 2 eight inch round, 1.5 inch deep....so it will be iced in the middle. In his recipe it calls for 1 cup butter and 1 cup shortening and 6 cups icing sugar and 1/2 cup cream. So will that make too much icing? I'm just wondering if I should cut it in half.
You will have more than you need, but I try to make more than I need anyway. You can always just put the leftovers in a ziplock bag in the fridge and use it later.
