Does anyone have a really yummy banana cake recipe they wouldn't mind sharing? I have been looking all over and haven't come across any good ones. The comments are always talking about how they are more like bread than light and fluffy like cake. Thanks for your help!!

This one is my favorite...although it doesn't make a big cake, more of a dessert cake. I've never tried to actually try to decorate with it icon_rolleyes.gif

1 cup sugar
1 cup mashed ripe bananas (about 3)
½ cup vegetable oil
2 eggs
1 cup flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
½ cup chopped nuts

Heat oven to 350. Grease 9x9x2 pan. Beat sugar, bananas, oil, eggs, and then the rest. Bake 30-40 minutes, or done. Cool.

Cream Cheese frosting

1 package 3 oz. cream cheese (softened)
½ cup margarine
1 teaspoon vanilla
2 cups xxx sugar

Beat cream cheese, margarine and vanilla on low speed, gradually beat in xxx sugar.

This is a very good one....I chop some chocolate dust in flour and fold it in at the end.....delicious. I use butter not margarine in this recipe.
