A 1/2 butter, 1/2 shortening b/c recipe doesn't require refrigeration.

I do butter/hi-ratio all the time. 1/2 and 1/2, or 1/3 and 2/3. Stays out of the frig just fine, though I do refrigerate mine (because I have a seperate cake frig). Good stuff!
You can... I don't make it any other way anymore! I usually sub 2 cups of butter (a whole pound block) in for the same amount of shortening. It crusts well and tastes DIVINE. But it is "softer" than the regular recipe after it crusts. Not a problem, just something to be aware of...
