Hello all. I am in need of some help. I have a few questions and knew that this was the place to come for my answer's.

I have a wedding cake due May 1st and she wants a chocolate cake (got that recipe so no worries) but she wants a Mocha Mousse filling!!! Anyone have any great recipes for it? HELP!

Also, she hates fondant. I dont want to chance not getting my icing perfectly smooth for her big day cake so I thought Satin ICe would be nice. I have not personally tried it. Is it any good and do people love it.

Lord I am a perfectionist and want her cake to be PERFECT for her big day. Any help would be great. Thanks in advance!!

I would add instant coffee to the cream/milk in your favorite mousse recipe. There are some good ones in the recipes section.
