I have made a pink lemonade cake and I am trying to figure out the best frosting to go on it. I don't want to do a frosting with a lemon flavor (might be too much). I would love any suggestions you have! Thanks a bunch!
You could do one that had a mild lemon flavor, or just a creamy vanilla (not too strong on the vanilla though). Unless you are wanting something bolder, then you could go with raspberry. You could do a stabilized whipped cream if you wanted something more neutral.
I was thinking vanilla would work but I was affraid of the aftertaste vanilla has. It may just be me but vanilla isn't my fav. Thanks for the ideas Renaejrk!
You're welcome! Lemon cake is one of our faves around here! But I go overboard - I do lemon curd with cream filling and lemon buttercream - no shortage of lemon here!! lol (we like lemon - can you tell?)
If it's for a dessert type cake (not decorated) I would do Italian Meringue (NOT Italian Meringue Buttercream, just the meringue itself).
I found it on the internet but I don't remember where. I printed a few out and compared. This one is awesome!!! It reminds me of a pound cake but better.
Here it is:
9oz pink lemonade concentrate, thawed
white cake mix
3 egg whites
2 Tbsp veg. oil
( for less tart cake, use 3/8c. water and 3/4 cup lemonade) - this is my favorite
do not over mix.
I don't have baking times because my oven is funky. I think it said 350 but I don't remember the time.
