I have seen so many Monograms that look like there were made out of fondant and I wanted to know how they are done. Any help would be so very appreciated.

Find a monogram font you like on the computer then print the letter you're looking for in the size you desire. Cut out and use as template to cut fondant/gumpaste. Hope this helps, it has worked for me.
